This recipe for fathead keto bread rolls is the best you will ever have. These keto rolls are fluffy and taste like the holiday rolls your grandma used to make! You will love these keto dinner rolls, however, if you are looking for a keto bread, similar to white bread check out this recipe.

butter spread on a sliced keto roll

The keto diet has replacements and substitutions for many our favorite foods – bread is included here. My favorite keto bread recipes are keto buns, keto bread and these keto rolls.

Everyone needs a good keto roll recipe in their arsenals of recipes. This one is easy to make, so you can whip a batch up to serve along with dinner. And it’s the closest thing to a traditional non-keto dinner roll that you can get, so it’s perfect for holiday meals or potlucks because you friends and family will love them.

The secret to scrumptious rolls is adding a little bit of buttermilk or yogurt. It helps with the flavor, and it helps to make the bread rise in the oven.

Spread some grass-fed butter over the top and you will no longer be missing bread on the keto diet. You can enjoy it everyday!

What is fathead dough?

close up of bread crust

If you have heard of fathead dough before, you are probably used to seeing it used as a keto pizza crust in low carb recipes. It can be used to make other breads and baked goods. In this recipe, we are taking the main components of fathead dough (mozzarella cheese, almond flour and egg) as a base for our keto bread roll recipe.

We add other ingredients, like buttermilk or yogurt, to help decrease the cheese flavor that some fathead doughs can have.

How to Get Keto Bread to Rise

Since keto bread typically doesn’t use gluten based flours or yeast, it can be difficult to get the dough to rise in the oven. The ingredients in this recipe that help the dough rise are the use of baking powder and baking soda. Baking soda needs to react with an acid in order to produce carbon dioxide bubble to puff up the dough while baking. The acid in this recipe is the buttermilk or yogurt.

ice cube in the oven

Another trick you can use to help your keto bread rolls rise is to throw a handful of ice cubes in the oven while the rolls are baking. The ice cubes will rapidly melt creating steam. Steam in the oven will also help you keto dough rise. Of course, if you had a steam oven, this would work even better.

Mixing the Keto Bread Dough

The best way to mix up this keto bread dough is to use a food processor. Since this is a fathead dough, the best way to incorporate the cheese with the rest of the ingredients is with an electric tool – like a food processor or mixer. I prefer the food processor because just a few seconds on the pulse button and the ingredients are combined. You can use an electric mixer but it’s a little messy because the ingredients can fly out of the bowl sometimes.

My favorite food processor is by Breville.

Is Buttermilk Keto?

Although it may seem like buttermilk has a lot of carbohydrates in it, it’s really not that much when you break it down per serving. In this recipe for keto rolls, we use 1/4 cup of buttermilk. That equates to 3 net carbs for the entire recipe; therefore, buttermilk is keto approved.

I like to use buttermilk in recipes because it adds a tangy flavor and serves as an acid to interact with baking soda, which will help leven baked goods. In other words, it helps the bread to rise. The tanginess covers up the cheese and egg flavor in keto breads.

Keto Approved Yogurt

If you don’t want to use buttermilk, a low carb yogurt works well in this recipe too. It is tangy and acidic to give the bread flavor and help it rise while baking.

container of keto yogurt

My favorite brand of keto approved yogurt is by Peak Yogurt. Their yogurt is triple creamed and only has 4 g net carbs per serving and it is made from Grass-fed cows. If you can’t get a hold of their yogurt, another brand to try is Two Good Yogurt. This yogurt has 3 g net carbs.

If you can’t get ahold of either of those, when all else fails, just look for a Greek yogurt with the lowest carb count. You are only using 1/4 cup of yogurt for the entire roll recipe, so it won’t push your carb limit too much.

The Best Keto Bread Rolls: FAQS

How many carbs are in bread rolls?

Traditional bread rolls with wheat flour have a significant amount of carbohydrate ranging from as low as 15 Net Carbs to well over 30 carbs per roll! This keto bread recipe has only 7 Total Carbs and just over 4 Net Carbs!

Can I add seeds such as sesame seed?

Sure. Experiment with the 'kitchen sink' of seeds! Other than sesame seeds you could use poppy seeds, minced dried garlic or onion, flaked sea salt and garlic powder. I would either add melted butter and then top with seeds, or I would apply an egg wash, then top with seeds and do another couple of minutes in the oven. I could see this turning into a nice sandwich roll or burger bun!

Does this recipe contain psyllium husk powder?

No. While psyllium powder is in many keto recipes, this bread roll recipe does not call for it.

    1. Hi Tracy! I have never tried, but I believe you could, however you would need to bake it at a lower temp to make sure it bakes all the way through. I would experiment at 325 to 350 degrees. Please let us know how it goes.

      1. So delicious! The entire family loved it! The best keto rolls! Thanks for sharing this amazing recipe ??

  1. Sounds a little silly, but do you think the recipe will definitely work if I half the recipe?
I know your recipe makes 12 bread rolls but I only need to make about 6. I don’t want to ruin the recipe if halving does not work but very curious as I definitely can’t eat 12 that fast!

    Thanks

    1. I could not find any cream cheese at the stores, because of the holidays I guess. So I had 2 ounces of cheese which I made half recipe, It came out very good

  2. I did half it and it worked out fine I’m the only one in my household on keto so I can’t have too many rolls laying around. I was wondering about using sour cream I think I’m going to use that the next time instead of the heavy cream and vinegar

    1. Yes, I’ve been using sour cream lately when I make this recipe since I don’t always have low carb yogurt or buttermilk around or feel like making it from heavy cream and vinegar. Still tastes delicious with the sour cream.

  3. I made this recipe and used half to make cinnamon rolls and the other half to make rolls, I didn’t put any sugar in the mix but used Keto approved brown sugar and cinnamon with butter before rolling it.

  4. Just saying….love the recipe and how low the carbs are (trying to control my blood sugars, so I don’t end up with a pre diabetes diagnosis) BUT the sodium level takes them out, as I watch sodium for blood pressure (finally well controlled but I always reduce sodium every where I can). Frustrated that most bread products are off my diet ?

    1. Oh no! I understand your concern about controlling sodium levels. On the keto diet, you do tend to excrete more sodium since insulin levels are lower. Insulin signals the kidney to hold onto sodium, which is why prehypertension and hypertension are a sign that a person is insulin resistant. Something to keep in mind so you don’t have to be too afraid of sodium on the keto diet. In fact, many people on a low carb diet have to supplement with sodium because it gets flushed out in the urine (that’s why a person might get the keto flu in the beginning). But, I have created a new bread recipe recently that doesn’t use cheese and should have less sodium. I haven’t put it on the website yet, but it’s coming.

      1. Thank you for that explanation about hypertension. Not many make the connection on how a low carb/keto diet can reverse hypertension.

  5. Made these rolls into hamburger buns. Cooked for 18 min. Perfect.
Question: do you know if this recipe was ever made into a bread loaf? Interested in doing this but not sure how long to cook. Looking forward to hearing from you.

        1. I have only made rolls from this recipe but my keto bread recipe, it just makes one loaf. I think I give the size of loaf pan on that recipe in the text.

    1. I made these and they were very tasty. Everyone who ate them thought they were good. They had more of a biscuit texture than that of bread, though. I loved them as rolls, but I wouldn’t make them for hamburger buns.

  6. I’ve just made these
    There amazing
    Only just started keto diet
I’m a bit confused. Where it says Net Carbs 4.2g is that for 1 roll or the full 12 rolls
    Thank you in advance xx

        1. Nutritional facts are allows right below the main picture. Each roll would be 261 calories, 20.5 grams fat, 7.3 grams total carbs, 4.2 grams net carbs and 14.4 grams protein

          1. Do you know what the total carbs per roll would be? I’m on a diabetes reversal program and have to count total carbs.

  7. I just made these and they turned out perfect.
Tried one with a little butter, so good.
My one batch made 21 rolls.
I am assuming you can freeze these right?
    Thanks, Marg

  8. I’ve made these several times using sour cream instead of yogurt. I keep them frozen and tonight after thawing one in the micro, I toasted it. What a delicious change! Just like a Rhoades roll that I used to bake at Christmas. I’ll always toast them from now on. Thank you for a super recipe.

  9. I am going to try these. They look delicious. Yesterday you were showing us what you have in your freezer and you had Smart Buns. Are you in the states as we cannot get them in Canada. I ordered the Love good fats bars and I am going to make the lasagna using the cold meat cuts. Thanks for all the great recipes.

  10. We love these rolls! I have made them in batches of 12 larger rolls, 16 medium rolls, and 20 small rolls. I froze a dozen small rolls last time in packs of six. We use them for dinner rolls and for breakfast sandwiches. I used my stand mixer with the dough hook, but I was glad to see this addressed in another comment and will try the paddle next time. This is the easiest and best dough recipe I have EVER made, including traditional yeast doughs. It always turns out great! To avoid sticky fingers, I follow the recipe notation and keep a small bowl of water or a wet paper towel handy to moisten my hands while working the dough into balls. Thank you for sharing your recipes and videos!

  11. Hi I would like to try this recipe – it looks so good. Can you tell me if your oven temperature is for conventional or fan oven. I have fan.
    Thanks

  12. Hi I made these rolls today and got into a bit of a mess. I don’t think I melted the cheese enough which ended up in all the nooks and crannies of the food processor, and of course I didn’t find out until cleaning it. During mixing the texture was so wet that I kept adding more almond flour but it still wouldn’t firm up. I’m also wondering if I added the wrong amounts of ingredients. Could you please be kind enough to give measurements in mls for liquid ingredients and grams for dry ingredients. I’ve googled it but no two sites agreed on weights.

    1. If that happens, where the cheese doesn’t look melted enough, I will put it back in the microwave to melt again. The dough should be a little tacky. I can look into adding grams or ml to some of my recipes.

  13. I am very excited about a discovery I made, quite accidentally: I had made these rolls two or three times, and just loved them. The flavor is so good, and even non-keto family enjoy them. However, the texture of the rolls was more like a biscuit to me. I liked them, but I wished for them to be a little more “bread-like.” Yesterday I made them and we had them for dinner. For some reason the texture was very different! I thought that it was because at least part of the recipe used Anthony’s almond flour, which was quite a bit finer than that which I used before. However, while making notes on the recipe, it hit me: I had completely forgotten the eggs! When the rolls are hot, without eggs it is hard to tell that they are not “regular” bread rolls. I’m going to keep making them that way, and paying attention to the effect so the flour grind. Thanks so much for creating such a tasty combination….

    1. I haven’t tried lupin flour yet, but this is something I want to experiment with. You may be able to straight sub out the coconut flour, but you might have to add a little more lupin flour to get the right consistency.

  14. I just made these today and love them. My husband ate one too and liked. He did say he tasted salt though and I told him it was probably the cheese. Wish I could send. You a picture

  15. Hello,

(By mistake I wrote the comment under your French fries but I was talking about this recipe..)
I have counted all the ingredients one by one but the macros seems totally different from the ones mentioned in the recipe.
    Can you please check?
    Thank you

    1. The macros are correct. I might depend on the brand of almond flour or xanthan gum you use. Even the macro calculator. I use MyFitnessPal since it is pretty reliable.

  16. Hi, I live in France and almond flour is quite expensive and hard to get here. Any ideas which other flour I could use instead?

    1. I haven’t tried other substitutes in this recipe, so I’m not sure how it would turn out. But if I were to experiment with coconut flour, I would use 1 cup of coconut flour for the whole thing.

  17. Loved these biscuits! Even my daughter who doesn’t like cheese ate these! (She still doesn’t know they are made with cheese!?) Nice crust and fluffy inside. They also freeze well.

  18. Hi, I was wondering if anyone has added a bit of Cheddar and wild garlic leaves? I want to make a seasonal bread with the wild garlic (Bärlauch) but wasn`t sure if it would be too dry adding the extras. Thanks in advance

  19. I believe this is the recipe that hooked me to your channel! I’ve made this recipe so many times for my “sandwich bread” for myself as well as another friend who is on keto and my father who is diabetic. I tend to make the rolls somewhat flatter before I put it in the oven and cut in half to make thinner slices after they’ve cooled. I store my extra rolls in the freezer (being careful not to store them next to each other or they kind of stick together so I separate with wax paper). I belong to a few Facebook groups and whenever someone is asking for a good break recipe I always comment with your link. I don’t, however, use buttermilk because I don’t have use for it and the yogurt I buy are all keto flavored kind so I use coconut milk mixed with a teaspoon of vinegar and works like a charm. You’re a genius, Annie!

  20. These are delicious! Is there something I can substitute coconut flour with? Its hard for my stomach to digest coconut flour.

  21. I just made a batch of these keto rolls. I was skeptical at first because I typically don’t like coconut flour in my roll or bread recipes. These are amazing! I love the flavor and texture of these rolls. I read every review beforehand. I made as recipe was written except, I used sour cream instead of yogurt or buttermilk and I used only 1 large egg, fantastic! I used my food processor and dough was not runny and easy to work with having a small bowl of water to moisten my hands when rolling into balls. Thank you SO for posting this (and all of your) delicious recipe!

  22. I just made your bread rolls recipe. They are delicious. I added yogurt instead buttermilk. I’ve been trying a lot of different recipes for a really good keto bread. Thank you so much.

  23. Oh wow. Finally made this recipe and delicious!! I made it into a hamburger bun. It was so worth the wait. Thanks so much for sharing. These will definitely make my holiday table this year.

  24. I have made these a few times and they are awesome. Today, when I made them, the cheese wrapped around pillar of the food processor – it would not mix with the other ingredients. I pulled it off and but it on the flour mixture and once again, it just wrapped around the pillar. I finally put everything on a board and worked it in by hand – not sure what went wrong – any thoughts?

    1. That has happened to me before. It usually because my cheese cooled too much, so I will take the dough out and microwave it for 20-30 seconds, then pulse again.

  25. I just found you Facebook and looked through a ton of your recipes. I made this one tonight and they are delicious. I actually didn’t have enough baking powder…but made them anyway. They did rise, but not how they should. That didn’t stop us from eating them. I put butter and jelly on mine. Husand put butter on his. Son just shoveled them in his mouth. LOL

    So happy I found you!

  26. Just made these rolls and they are great! One question… How long will they stay fresh if I do not freeze them?

  27. Best rolls I’ve eaten since beginning KETO! I’ve made them several times. I could have eaten an entire pan! I did add a bit of sweetener to my rolls. I made just 1/2 recipe and they turned out beautifully!

I think I must have missed the carb count per roll. You are always so thorough, I’m sure it’s here somewhere, but I just haven’t found it. Could you please tell me what the carb count per roll is if you make them according to your recipe?
    Many thanks,
    DeAnna

  28. Wife just made them. Awesome but I can’t eat all 12? Darn….great stuff. By the way best way to store them? And also reheating best way…

  29. Hi,
What can I do instead of melting the cheese in a microwave? I don’t have one… thank you,
    Michal

  30. Just made these Keto rolls (took the tip of using sour cream). They turned out delicious–just need to keep from eating them all in one sitting!

  31. Just made these for the first time this morning at the request of my sister who absolutely loves them. They are delicious. What I did different was rolled them out between two pieces of parchment and then used a biscuit cutter dipped in almond flour to cut biscuits and then I nuzzle them right up next to each other on the pan and they had such wonderful soft edges. I think next time I’ll make the dough thicker and knock the temperature down to make them thicker biscuits as they were a little skinny for me but they were delicious thank you so much. I also made homemade jelly. Felt like CHEATING.

  32. A real gamechanger!! I have missed bread alot!!
So fast and easy to make and delicious! My husband had 2 sausage and egg sandwiches!!
