Keto Bread Rolls Ingredients
- 3 cups shredded mozzarella cheese
- 4 ounces cream cheese
- 2 eggs
- 2 1/4 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup buttermilk or plain low carb yogurt

Preheat
Preheat oven to 400 degrees.

Melt the cheese
In a small glass bowl, add shredded mozzarella cheese and cream cheese. Microwave at 1 minute intervals until the cheese is melted and cream cheese has softened. If you don't want to use a microwave, melt the shredded cheese over the stovetop in a non-stick skillet and use softened cream cheese.

Get your food processor
To a food processor, add remaining ingredients and melted cheeses. Pulse until combined. You may also combine the ingredients using an electric mixer; however, the dough comes together evenly and faster using a food processor.

Create dough balls
Wet your hands with some water or oil in order to handle the dough. This will prevent the dough from sticking to your hands. Grab a handful of dough, form it into a ball and place on a parchment lined baking tray. Continue with remaining dough. You can form your desired size. Dough balls larger than 2.5 inches wide, will require longer cooking times. Evenly place dough balls on the tray spacing about 1 inch apart.

Bake the rolls
Bake at 400 degrees Fahrenheit for 13-18 minutes or until hardened on the outside and slightly firm on the inside. Let cool for 3-5 minutes before eating.
Is it possible to make this in a loaf pan….so that it’s more like sliced bread? It is yummy.
Hi Tracy! I have never tried, but I believe you could, however you would need to bake it at a lower temp to make sure it bakes all the way through. I would experiment at 325 to 350 degrees. Please let us know how it goes.

Yes! You can substitute with that.

Sounds a little silly, but do you think the recipe will definitely work if I half the recipe?
I know your recipe makes 12 bread rolls but I only need to make about 6. I don’t want to ruin the recipe if halving does not work but very curious as I definitely can’t eat 12 that fast!

You can half the recipe. I have done that before – especially when I test different ingredients – like using sour cream in place of the low carb yogurt or buttermilk.

I could not find any cream cheese at the stores, because of the holidays I guess. So I had 2 ounces of cheese which I made half recipe, It came out very good

Yes, I’ve been using sour cream lately when I make this recipe since I don’t always have low carb yogurt or buttermilk around or feel like making it from heavy cream and vinegar. Still tastes delicious with the sour cream.
Could I make the dough ahead of time and then refrigerate until I’m ready to bake?
Yes, you can! You can even freeze the dough too.
What is your process for cooking the rolls after the dough being frozen?
I just defrost them either on the counter at room temperature or defrost them in the microwave for 30-60 seconds
Did I see that you used a dough blade in your food processor vs the regular one?
I have used both. I think the regular blade works better.
I tried this recipe. The dough was runny and I were unable to form balls.
The dough should be the consistency to that in the video. If you dough looks runny, then add more almond flour
I made this recipe and used half to make cinnamon rolls and the other half to make rolls, I didn’t put any sugar in the mix but used Keto approved brown sugar and cinnamon with butter before rolling it.
Just saying….love the recipe and how low the carbs are (trying to control my blood sugars, so I don’t end up with a pre diabetes diagnosis) BUT the sodium level takes them out, as I watch sodium for blood pressure (finally well controlled but I always reduce sodium every where I can). Frustrated that most bread products are off my diet ?
Oh no! I understand your concern about controlling sodium levels. On the keto diet, you do tend to excrete more sodium since insulin levels are lower. Insulin signals the kidney to hold onto sodium, which is why prehypertension and hypertension are a sign that a person is insulin resistant. Something to keep in mind so you don’t have to be too afraid of sodium on the keto diet. In fact, many people on a low carb diet have to supplement with sodium because it gets flushed out in the urine (that’s why a person might get the keto flu in the beginning). But, I have created a new bread recipe recently that doesn’t use cheese and should have less sodium. I haven’t put it on the website yet, but it’s coming.

Yes, I have made two larger bread loaves with this recipe. Lower the temp to 350 and cook for 20-25 minutes.

I have only made rolls from this recipe but my keto bread recipe, it just makes one loaf. I think I give the size of loaf pan on that recipe in the text.
I made these and they were very tasty. Everyone who ate them thought they were good. They had more of a biscuit texture than that of bread, though. I loved them as rolls, but I wouldn’t make them for hamburger buns.

Do you know what the total carbs per roll would be? I’m on a diabetes reversal program and have to count total carbs.

I’ve made these several times using sour cream instead of yogurt. I keep them frozen and tonight after thawing one in the micro, I toasted it. What a delicious change! Just like a Rhoades roll that I used to bake at Christmas. I’ll always toast them from now on. Thank you for a super recipe.

We love these rolls! I have made them in batches of 12 larger rolls, 16 medium rolls, and 20 small rolls. I froze a dozen small rolls last time in packs of six. We use them for dinner rolls and for breakfast sandwiches. I used my stand mixer with the dough hook, but I was glad to see this addressed in another comment and will try the paddle next time. This is the easiest and best dough recipe I have EVER made, including traditional yeast doughs. It always turns out great! To avoid sticky fingers, I follow the recipe notation and keep a small bowl of water or a wet paper towel handy to moisten my hands while working the dough into balls. Hi I made these rolls today and got into a bit of a mess. I don’t think I melted the cheese enough which ended up in all the nooks and crannies of the food processor, and of course I didn’t find out until cleaning it. During mixing the texture was so wet that I kept adding more almond flour but it still wouldn’t firm up. I’m also wondering if I added the wrong amounts of ingredients. Could you please be kind enough to give measurements in mls for liquid ingredients and grams for dry ingredients. I’ve googled it but no two sites agreed on weights.
If that happens, where the cheese doesn’t look melted enough, I will put it back in the microwave to melt again. The dough should be a little tacky. I can look into adding grams or ml to some of my recipes.
I am very excited about a discovery I made, quite accidentally: I had made these rolls two or three times, and just loved them. The flavor is so good, and even non-keto family enjoy them. However, the texture of the rolls was more like a biscuit to me. I liked them, but I wished for them to be a little more “bread-like.” Yesterday I made them and we had them for dinner. For some reason the texture was very different! I thought that it was because at least part of the recipe used Anthony’s almond flour, which was quite a bit finer than that which I used before. However, while making notes on the recipe, it hit me: I had completely forgotten the eggs! When the rolls are hot, without eggs it is hard to tell that they are not “regular” bread rolls. I’m going to keep making them that way, and paying attention to the effect so the flour grind. Thanks so much for creating such a tasty combination….

I don’t like the taste of coconut flour, could I substitute it for lupin flour?
I haven’t tried lupin flour yet, but this is something I want to experiment with. You may be able to straight sub out the coconut flour, but you might have to add a little more lupin flour to get the right consistency.
What can we used instead of coconut flour dont like the taste of it ?
You can’t taste the coconut flour in these rolls. The buttermilk and cream cheese help to cut that flavor out.

The macros are correct. I might depend on the brand of almond flour or xanthan gum you use. Even the macro calculator. I use MyFitnessPal since it is pretty reliable.
Hi, I live in France and almond flour is quite expensive and hard to get here. Any ideas which other flour I could use instead?
I haven’t tried other substitutes in this recipe, so I’m not sure how it would turn out. But if I were to experiment with coconut flour, I would use 1 cup of coconut flour for the whole thing.
Loved these biscuits! Even my daughter who doesn’t like cheese ate these! (She still doesn’t know they are made with cheese!?) Nice crust and fluffy inside. They also freeze well.

I believe this is the recipe that hooked me to your channel! I’ve made this recipe so many times for my “sandwich bread” for myself as well as another friend who is on keto and my father who is diabetic. I tend to make the rolls somewhat flatter before I put it in the oven and cut in half to make thinner slices after they’ve cooled. I store my extra rolls in the freezer (being careful not to store them next to each other or they kind of stick together so I separate with wax paper). I belong to a few Facebook groups and whenever someone is asking for a good break recipe I always comment with your link. I don’t, however, use buttermilk because I don’t have use for it and the yogurt I buy are all keto flavored kind so I use coconut milk mixed with a teaspoon of vinegar and works like a charm. I made as recipe was written except, I used sour cream instead of yogurt or buttermilk and I used only 1 large egg, fantastic! I used my food processor and dough was not runny and easy to work with having a small bowl of water to moisten my hands when rolling into balls. I have made these a few times and they are awesome. Today, when I made them, the cheese wrapped around pillar of the food processor – it would not mix with the other ingredients. I pulled it off and but it on the flour mixture and once again, it just wrapped around the pillar. I finally put everything on a board and worked it in by hand – not sure what went wrong – any thoughts?
That has happened to me before. It usually because my cheese cooled too much, so I will take the dough out and microwave it for 20-30 seconds, then pulse again.
I just found you Facebook and looked through a ton of your recipes. I made this one tonight and they are delicious. I actually didn’t have enough baking powder…but made them anyway. They did rise, but not how they should. That didn’t stop us from eating them. I put butter and jelly on mine. Husand put butter on his. Son just shoveled them in his mouth. LOL

Sunflower seed flour measures cup for cup with almond flour, so that would be a good substitute. I haven’t tried this recipe with coconut flour.

Best rolls I’ve eaten since beginning KETO! I’ve made them several times. I could have eaten an entire pan! I did add a bit of sweetener to my rolls. I made just 1/2 recipe and they turned out beautifully!
I think I must have missed the carb count per roll. You are always so thorough, I’m sure it’s here somewhere, but I just haven’t found it. Could you please tell me what the carb count per roll is if you make them according to your recipe?

Just made these Keto rolls (took the tip of using sour cream). They turned out delicious–just need to keep from eating them all in one sitting!
Just made these for the first time this morning at the request of my sister who absolutely loves them. They are delicious. What I did different was rolled them out between two pieces of parchment and then used a biscuit cutter dipped in almond flour to cut biscuits and then I nuzzle them right up next to each other on the pan and they had such wonderful soft edges. I think next time I’ll make the dough thicker and knock the temperature down to make them thicker biscuits as they were a little skinny for me but they were delicious thank you so much. I also made homemade jelly. Felt like CHEATING.
