1. Preheat grill to high heat. Roast onion and jalapeños on a grill at high heat (400 degrees) for 3-5 minutes, turning occasionally to evening cook. Cook until skin lifts from the jalapeño and the onion is softened. Remove from the grill and let cool before peeling jalapeño skin and removing the seeds.
