INGREDIENTS:

– 1 pound ground beef – 4 tablespoons butter – ½ cup diced onion – ¼ cup red bell pepper – 3 stalks celery, chopped – 1 cup diced Daikon radish – 1 teaspoon arrowroot powder – 3 cups chicken broth or beef broth – 1 cup heavy cream – 2 cups shredded cheddar cheese – 1 teaspoon salt – ½ teaspoon pepper – 3 slices cooked crumbled bacon – 2 cups shredded lettuce – 1 medium tomato, sliced

1. In a large stock pot, cook ground beef over medium heat until browned. Remove and set aside.

Cook the Ground Beef

2. In the same pot, add butter, onion, bell pepper and celery. Cook until softened about 3-5 minutes.

Sauté Vegetables

3. Add back in ground beef, daikon radish and arrowroot powder. Stir to combine.

Add Beef, Radish and Thickener

4. Stir in chicken broth or beef broth. Bring soup to a boil, then turn down to a simmer over low to low-medium heat. Let simmer for 10 to 12 minutes.

Add Broth and  Let Simmer

5. Remove from heat and stir in cream, cheese, salt and pepper.

6. Serve with shredded lettuce, tomato slices and crumbled bacon to make a keto bacon cheeseburger soup.
