– 2 (14 oz) cans unsweetened, full fat coconut milk or cream
– 3 tablespoons red or green curry paste
– 1 teaspoon fish sauce
– 2 teaspoons lime juice
– ½ teaspoon salt
– 1 medium zucchini, diced
– ½ red bell pepper, julienned
1. Add one can of coconut milk to a sauce pan. Heat over medium-high heat until the coconut milk boils. Continue cooking at a medium boil until the milk has reduced by ⅓ or ½.
4. Stir in fish sauce, lime juice, salt and zucchini. Let cook for 2 minutes. Add in bell pepper and cook for 1 minute. Serve over cauliflower rice and add chicken to make keto chicken curry.
