1. Preheat oven to 350 degrees. Using a cheese grater, shred the zucchini. You will need about 1 1/2 cups shredded zucchini for this recipe.

2. To a large bowl, add almond flour, sugar free sweetener, protein powder, cocoa powder, baking powder and salt. Stir to combine.

3. To the dry ingredients, add eggs, sour cream, melted butter and grated zucchini. Stir with an electric mixer to combine.
