Keto Pork and Rice

"Pork and rice is an easy keto dinner you can make on a busy weeknight. It's the ideal meal to make when you have leftover pork as well. Stir fry pork with leftover vegetables and mix in a low carb cream of mushroom. Add keto rice or cauliflower rice to finish the dish."

INGREDIENTS:

– 2 tablespoons avocado oil – 1 cup sliced mushrooms – 1/2 green bell pepper, diced – 1/2 yellow onion, diced – 2 cups cubed cooked pork or 1 lb ground pork – 1 teaspoon garlic powder – 1 teaspoon onion powder – 1/2 teaspoon salt –  8 oz mushroom soup – 9 oz hearts of palm rice or cauliflower rice

1. Add avocado oil to a skillet and heat over medium heat. Add mushrooms, bell pepper and onion and stir fry vegetables. You can use any vegetables that might pair well in this recipe. Cook until vegetables have softened.

Sauté vegetables

2. Add pork to the skillet and cook until heated through or browned (if using ground pork). Sprinkle in garlic powder, onion powder and salt. NOTE: If using raw pork, remove vegetables first and set aside.

3. Pour in mushroom soup and stir until heated through.

4. Add keto rice or cauliflower rice to the skillet and stir until heated through. Season with additional salt and pepper to taste.
